Coop or Co-op? Dear Sexy G

Dear Sexy G, I am excited about starting a cooperative business. I want to blog more about co-ops, but I am confused about proper hyphen usage.  I notice a mix of hyphen uses.  Co-op is always hypenated, whereas co-operative sometimes has a hyphen and sometimes doesn't.  What is grammatically correct?
